Noni Jo's Pizza Chicken

Pizza Chicken


1 lb
Chicken (Cut into thin strips approximately 2 inches long)
4 cn
No Salt Added Diced tomatoes (Drained)
2 cn
Crushed Tomatoes
Red Pepper (Sliced into strips)
Green Pepper (Sliced into strips)
Onion (Sliced or Diced)
4 T
Dry Basil
2 clv
Garlic (Finely chopped)
3 T
Dried Oregano
1 T
Dried Crushed Red Pepper

Olive Oil
1 lb
Baby Bella Mushrooms (Sliced)


Add the olive oil to a large saucepan or skillet over medium heat. Add the chicken, garlic, and season with salt and pepper. Cook medium heat until the chicken is no longer pink. Add peppers, onions and mushrooms to the pan and cook over medium heat for 5-7 minutes.  Add the drained, diced tomatoes, crushed tomatoes, and spices.  Reduce heat and let simmer for 30-40 minutes until sauce reaches desired thickness. Season to taste with salt, pepper, and Italian seasoning, if needed.

Serve over spaghetti squash or roasted eggplant slices. If you are not on a strict Paleo Diet, top with fresh romano, parmesan or mozzarella cheese for a delicious, pizza like experience!



Delicious served over spaghetti squash or roasted eggplant slices. Keeps in the refrigerator for 3-5 days and tastes great if eaten as leftovers.  Vacuum seals well for easy and fresh frozen meals.
