Description

Delicious Paleo friendly side dish!

Ingredients

2 lb
Cauliflower (Cut into florets)
1 ct
Low Sodium Chicken Stock
2 clv
Garlic (Finely chopped)

Instructions

Combine the cauliflower, chicken stock, and garlic in a large pot.  Add water until cauliflower is fully submerged. Boil for 30-40 minutes until cauliflower is soft enough to mash.  Drain the liquid, retaining approximately 1/2 cup to use during mashing (if needed). Mash cauliflower with a potato masher. Salt and pepper to taste.

Notes

 Serve with meat, poultry, and fish as a substitute for mashed potatoes.
